This week on Instagram I received a DM asking how I’m managing healthy meals and snacks now that my baby is on the move, I’m working full time, and I’m juggling several large projects. The honest truth: I’ve been slacking on full meal prep. I’m not a hardcore meal-prepper by nature, but I like to have a few go-to items each week. Typically I double up on dinners and eat leftovers for lunch, and I keep one or two ready-to-grab snacks in the fridge or pantry for emergencies. But with recent travel and a busy schedule, I’ve been improvising more than planning.
I’m motivated to return to a bit more planning so I can keep healthy, delicious snacks on hand. Muffins, dips, nut mixes, bliss balls and other favorites from my blog are now staples in my fridge again. Below are some tried-and-true snack ideas to help you nourish yourself and your family during busy weeks.
Double Chocolate Zucchini Blender Muffins
These muffins are rich and chocolatey while sneaking in a full serving of veggies. They’re gluten-free, dairy-free and free of refined sugar, making them a satisfying and healthier treat. Make a double batch: keep half in the fridge for the week and freeze the rest for later. Spread with peanut butter for a perfect snack.

Coconut Mango Chia Pudding
This chia pudding is an effortless, grab-and-go snack that uses simple, wholesome ingredients and gives a good energy boost when you need it. I’ve made many versions, but this coconut mango combination stands out for its bright flavor and creamy texture — ideal for busy days when you want something nourishing without extra prep time.

Peanut Butter Chocolate Chip Bliss Balls
These no-bake energy bites are a convenient, nutritious snack that can double as a dessert. They travel well and are perfect for busy days. I’ve also created a nursing-friendly version by adding a single lactation-support ingredient, making them especially nice for postpartum mamas who need an extra boost.

Roasted Red Pepper Hummus
If hummus is on the menu, I’m ordering it — but homemade beats takeout every time. This roasted red pepper version is simple to make and offers a flavorful twist on the classic. It’s perfect with veggies, crackers, or as a spread for sandwiches and wraps.

Chewy Snack Bars
These bars were a hit from my cookbook and are now on the blog because they’re easy, nostalgic, and dependable. They come together quickly and store well in the fridge so your family can snack on them all week. They make a great school or office snack when you want something homemade and satisfying.

Roasted Nuts, Sweet and Savory
Roasted nuts are one of the easiest snacks to prep and keep on hand. They’re convenient, pack well, and add flavor variety to your snack rotation. Toss together a sweet or savory batch for an easy, nutrient-dense option the whole family will enjoy.

Homemade Cinnamon Applesauce
Applesauce is a universal favorite and a comforting, kid-friendly snack that the whole family will eat. Homemade cinnamon applesauce is easy to make, lightly sweetened by the fruit, and ideal for packing into lunches or serving as a simple treat any time of day.

Gluten-Free Chocolate Banana Blender Muffins
These muffins are fluffy, wholesome and satisfyingly decadent. They’re blender-friendly, so preparation and cleanup are minimal. Enjoy them for breakfast, as a snack, or whenever you need a quick, comforting treat that’s still made with better-for-you ingredients.

Strawberry Shortcake Bliss Balls
These bliss balls channel the nostalgic flavor of strawberry shortcake in a healthier format. Packed with nourishing fats and nutrients, they make an energizing snack that both kids and adults will love. They’re a great way to deliver treat-like flavors with wholesome ingredients.

High Protein Banana Cream Pudding
This high-protein banana pudding is a light, sweet treat that keeps you full between meals. It’s easy to prep ahead and assemble when you’re ready to eat, making it a convenient snack for busy weeks when you want something satisfying but not heavy.
