Ingredients
- 1/2 cup peanut butter, (single-ingredient is preferred!)
- 2 tbsp ground flaxseed
- 2 scoops unflavored collagen peptides, (totally optional. Can leave out)
- 1/4 cup almond flour, (sub with 2-3 tbsp oat flour or coconut flour)
- Few shakes cinnamon
- 1 tbsp Manuka honey, (if you prefer sweeter I’d add 1-2 tbsp additional)
- 1 tbsp cacao nibs
- 3 tbsp dark chocolate
- Pinch flakey sea salt
Instructions
-
Combine the peanut butter, ground flaxseed, collagen peptides (if using), almond flour, cinnamon, Manuka honey, cacao nibs and chopped dark chocolate in a bowl. Stir until the mixture is evenly combined and holds together when pressed.
-
Roll the mixture into small, bite-sized balls. Press a few extra chocolate chips on top of each ball and finish with a light sprinkle of flaky sea salt for contrast.
-
Chill the balls in the refrigerator or freezer until firm. These make an easy, nutrient-dense snack packed with fiber, healthy fats, protein and antioxidants to fuel you any time of day.
