Here’s a crockpot recipe you’ll come back to again and again: Crockpot Beef Barbacoa. It’s tender, flavorful, easy to prepare, and makes excellent leftovers—perfect for busy weeknights or relaxed weekends.
I’m deep into my slow-cooker phase, and this barbacoa is one of my favorites so far. It builds on simple pantry staples and a few bold seasonings to create juicy, shreddable beef with minimal hands-on time.

SIMPLY DELICIOUS, HIGH-PROTEIN CROCKPOT BEEF BARBACOA
This recipe stars a beef chuck roast—a protein-rich, nutrient-dense cut that becomes fork-tender when cooked low and slow. The combination of spices, garlic, onion, tomato paste, chipotles in adobo and bone broth yields deep, savory flavor and a satisfying texture.
The beauty of a crockpot meal like this is how little active time it requires: a quick sear, a few minutes whisking a simple sauce, then set it to cook while you take care of the day. When it’s done, you’ll have richly flavored beef that pulls apart easily and tastes like it simmered for hours.

A NUTRITIOUSLY DELICIOUS DINNER SITUATION
Beef chuck roast delivers protein, iron and zinc—nutrients that support energy and overall wellness. When paired with antioxidant-packed spices like smoked paprika, oregano, chili powder and cumin, plus aromatics like garlic and onions, you get a meal that’s both nourishing and crave-worthy.
The collagen from the roast and the richness of low-sodium beef bone broth contribute to a silky mouthfeel and deep savory notes. A splash of fresh lime at the end brightens the dish and balances the smoky, spicy flavors.

You’ll sear the seasoned roast briefly, then let the crockpot do its work with chipotles in adobo, tomato paste, bone broth and lime juice. After 6–8 hours on low, the beef will shred easily into juicy, flavorful strands.
VERSATILE AND FLAVORFUL
This barbacoa is incredibly versatile. Serve it in warm tortillas with diced onion, avocado and cilantro for tacos, or ladle it over rice for a hearty bowl. It’s equally good served with a side salad, roasted vegetables, or tucked into burrito bowls.
Cleanup is minimal, it reheats beautifully, and it stores well—ideal for meal prep or feeding a crowd.

HOW TO MAKE MY CROCKPOT BEEF BARBACOA
For the Beef:
Pat the chuck roast dry, cut into 2–3 pieces for easier searing, and trim excess fat. Season generously with kosher salt, dried oregano, smoked paprika, chili powder, ground cumin and garlic powder so all sides are coated.
If your crockpot has a sauté function, heat it and add avocado oil. Brown the beef on all sides, about 2 minutes per side, working in batches if needed. If not, brown the beef in a skillet over medium-high heat, then transfer to the crockpot.
Set the crockpot to Low. Whisk together the beef bone broth, minced chipotles, tomato paste and lime juice, then pour over the beef. Add diced onion, garlic cloves and bay leaves. Nestle the roast into the sauce and cook on low for 6–8 hours, until the meat is very tender.
Remove the beef to a cutting board, let it cool slightly, then shred with two forks, discarding any excess fat. Return the shredded beef to the crockpot and toss to combine with the sauce.

To Serve and Store:
Spoon the barbacoa into warm tortillas and top with minced onion, diced avocado and chopped cilantro, or serve over rice. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
RECIPE SUBSTITUTIONS & NOTES
If you don’t have chuck roast, brisket can work well. Choose a tougher cut with connective tissue and fat so it becomes tender and shreddable during slow cooking. Adjust chipotles to taste—or omit them if you prefer milder flavor. Jarred minced garlic or regular beef broth can replace fresh garlic or bone broth in a pinch, though bone broth adds extra richness.

WHAT IS A CHUCK ROAST?
A chuck roast comes from the shoulder of the cow and becomes tender when cooked low and slow. It’s ideal for crockpot recipes because the long, gentle heat breaks down connective tissue into gelatin, creating juicy, flavorful meat.
WHAT’S THE DIFFERENCE BETWEEN BEEF BARBACOA AND BEEF BIRRIA?
Barbacoa typically refers to slow-cooked, shredded meat (often cooked in a pit, slow cooker or oven), while birria is traditionally braised and often served with a rich consommé or used as a dipping taco. Both are delicious—just different preparations and textures.
