Just because it’s easy doesn’t mean it lacks depth. This dish quickly earned a top spot in our dinner lineup thanks to its bright, cheesy flavor and satisfying texture.

Made with just a few ingredients—feta, pasta, cherry tomatoes, garlic, spinach, extra virgin olive oil, salt and pepper—you can see why it caught on so fast. To make it more balanced for our meals, I added shredded organic chicken for protein. The result? Absolutely delicious.

INGREDIENTS YOU’LL NEED:

  • Cherry tomatoes
  • Garlic cloves
  • Feta cheese (blocks)
  • Sea salt
  • Extra virgin olive oil
  • Spinach
  • Fresh basil
  • Fresh cracked pepper
  • Pasta of your choice (penne shown)
  • Avocado oil
  • Organic chicken breasts

HOW TO MAKE BAKED FETA PASTA

1. Preheat oven to 400°F (200°C).

2. In a 9×12 baking dish, combine cherry tomatoes, garlic cloves, blocks of feta, extra virgin olive oil, sea salt and pepper. Roast for about 40 minutes, until the tomatoes burst and the feta softens.

3. While the feta roasts, cook the pasta according to package instructions. Reserve some pasta cooking water before draining.

4. Heat a skillet over medium heat with avocado oil. Tenderize and season the chicken breasts with salt and pepper, then sear until golden and fully cooked (internal temperature should reach 165°F / 74°C).

5. Transfer the chicken to a cutting board and shred with two forks.

6. When the baked feta mixture is done, stir it well to combine the softened tomatoes and cheese into a creamy sauce.

7. Add the cooked pasta, shredded chicken, chopped spinach and basil to the baking dish. Toss to coat, adding a splash of reserved pasta water if you want a silkier texture.

8. Finish with fresh cracked pepper and extra basil, then serve immediately.

Note: Best enjoyed right away. Store leftovers in an airtight container in the refrigerator for 3–4 days.

RECIPE SUBSTITUTIONS & TIPS

Make this recipe your own. Add shallots to the baking dish for a sweeter, milder onion flavor, or tuck in rosemary or thyme sprigs for herbal notes. Any pasta shape works—penne, fusilli, or shells are all great. If you prefer a different cheese, goat cheese or brie can be used in place of feta for a different creamy profile.

WHAT IF I ONLY HAVE CRUMBLED FETA?

Crumbled feta works fine—pack the crumbles together in the center of the dish so they melt into a cohesive sauce. Alternatively, try goat cheese or brie for a different texture and flavor.

MY BAKED FETA PASTA IS TOO DRY. HOW CAN I FIX THAT?

If the sauce seems dry, add reserved pasta cooking water a little at a time while stirring until you reach the desired creaminess. The starchy water helps emulsify the sauce and create a silky finish.

Ingredients

  • 3–5 cups cherry tomatoes
  • 4–5 cloves garlic
  • 2 blocks feta cheese
  • 1/2 teaspoon sea salt
  • 1/4 cup extra virgin olive oil
  • 4 cups packed spinach, roughly chopped
  • 1/2 cup fresh basil, chopped
  • fresh cracked pepper
  • 1 box pasta of choice
  • 2 tablespoon avocado oil
  • 3 organic chicken breasts

Instructions

  1. Preheat oven to 400 degrees F.
  2. In a 9×12 baking dish, add tomatoes, garlic, feta, olive oil, sea salt and pepper. Bake for 40 minutes.
  3. While the feta bakes, prepare the pasta according to the directions on the box. Set aside.
  4. Heat a skillet over medium heat and add avocado oil. Tenderize the chicken, season with salt and pepper, and sear until golden and cooked through (165°F).
  5. Transfer the cooked chicken to a cutting board and shred with two forks. Set aside.
  6. When the baked feta comes out of the oven, mix and combine well.
  7. Add the cooked pasta, chicken, spinach and basil, and mix again. Add reserved pasta water if needed to loosen the sauce.
  8. Top with fresh cracked pepper and basil. Serve and enjoy!
  9. NOTE: Best enjoyed fresh; store in an airtight container in the fridge for up to 3–4 days.
