Cashew Chia Pudding

Ingredients
- 1 cup raw cashews
- 2 cups filtered water
- 2-3 tbsp maple syrup
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1/3 cup chia seeds
Instructions

Soak the cashews in warm water for about 4 hours. Drain well before using.

Place the soaked cashews in a high-powered blender with the filtered water, maple syrup and vanilla. Blend on high until completely smooth. Add the chia seeds and pulse briefly to combine evenly.

Transfer the mixture into jars or small containers, seal, and refrigerate to thicken for at least a few hours or overnight.

When ready to serve, add toppings such as warm berries, diced apple, banana, coconut flakes, oats, chocolate chips, or chopped nuts.
