SuperBowl Nachos

Ingredients

  • 1 tbsp avocado oil
  • 1 lb organic ground chicken
  • 1 packet taco seasoning, (I used Siete seasoning)
  • 1 bag chips, (A good corn tortilla chip would hold up best)
  • 1 can black beans, drained and rinsed
  • 1/2 cup cheese, grated, (I used goat cheese)
  • 1 4oz green chilis

Optional Toppings

  • red onion, chopped
  • tomatoes, chopped
  • green onion, chopped
  • jalapeño, chopped
  • avocado, sliced or cubed
  • sour cream, (I used Kite Hill dairy-free)
  • hot sauce
  • flaky sea salt

Instructions

  • Preheat the oven to 410°F (210°C).
  • Heat a medium skillet over medium heat and add the avocado oil.
  • Brown the ground chicken and season it according to the taco seasoning packet instructions. Once cooked, set the meat aside.
  • Line a baking sheet with parchment paper and spread the chips in an even layer.
  • Top the chips with the seasoned chicken, black beans, grated cheese and green chilis. Bake for about 12 minutes, or until the cheese is melted and the chip edges turn golden brown.
  • Remove from the oven, add any optional toppings you like—such as chopped red onion, tomatoes, green onion, jalapeño, avocado, sour cream, hot sauce and a sprinkle of flaky sea salt—and serve immediately.
