Creamy Sesame Chicken Skewers

Ingredients

Chicken Skewers

  • 1-2 lbs organic chicken breast, trimmed and cubed
  • 1 jar Side Dish Sesame Dressing
  • avocado oil
  • sea salt
  • green onion, chopped
  • wooden skewers, for cooking

Sides

  • 1 bundle broccolini
  • avocado oil
  • sea salt
  • rice, cooked according to package

Instructions

  • Soak wooden skewers in water for 30 minutes to prevent burning on the grill.
  • In a bowl, combine the sesame dressing (reserve about 2 tablespoons for serving), the juice of 1/2 lime, a splash of avocado oil, and a pinch of sea salt. Stir to blend, then add the cubed chicken and toss to coat. Marinate for 15 minutes.
  • Toss the broccolini with a little avocado oil and sea salt in a separate bowl and set aside.
  • Preheat the grill until it’s very hot (about 600°F if your grill measures that high).
  • Thread the marinated chicken onto the soaked skewers while the grill heats.
  • Place the skewers on the hot grill, cover, and cook 4–5 minutes. Flip, cover again, and cook another 4–5 minutes, until the chicken is cooked through and nicely charred.
  • Add the broccolini to the grill when the chicken is about halfway done and cook until it develops slight char marks and is tender-crisp.
  • Serve the skewers with chopped green onion, lime wedges, and the reserved sesame dressing. Pair with rice and enjoy.
