This is easily one of my favorite pasta dishes. If you’re dairy-free, cashews are the secret to a silky, rich texture that mimics a classic vodka sauce. Calabrian chiles add the perfect amount of heat, and the protein-packed meatballs are deeply flavorful.

A Simple, Spicy Sauce

This sauce will win you over whether or not you avoid dairy. It uses simple, nutrient-rich ingredients that deliver big on flavor. Cashews provide fiber, protein and healthy fats, and when soaked in hot pasta water and blended with fire-roasted tomatoes, they create an incredibly smooth sauce.

Combined with fresh vegetables and herbs, this sauce becomes a nutrient-packed, anti-inflammatory choice that’s perfect for weeknight dinners or meal prep.

Why Vodka Sauce?

The vodka helps release and amplify the sauce’s aromas and balances tomato sweetness. It cooks off after about 5–10 minutes, so a simple, inexpensive vodka is fine. If you prefer not to use alcohol, replace it with water and a squeeze of lemon—either way the sauce remains rich and delicious.

  • White onion
  • Garlic cloves
  • Fire-roasted tomatoes (canned)
  • Vodka (or water + lemon)
  • Raw cashews (soaked in hot water for 10 minutes)
  • Fresh basil
  • Calabrian peppers or chili flakes (to taste)
  • Sea salt and fresh ground pepper

How to Make Spicy Penne Alla Vodka with Meatballs

Meatballs

Mix the meatball ingredients and roll into 1-inch rounds. Chop onion and garlic for the sauce and set aside.

Heat 2–3 tbsp oil in a skillet until hot but not smoking. Cook meatballs over medium heat for about 5 minutes until golden, then flip and brown all sides. Reduce heat, add 2–3 tbsp water, cover, and allow to steam until cooked through.

Optional oven method: Preheat to 400°F. Arrange meatballs on a greased sheet pan and bake 30 minutes, finishing under the broiler for 1–2 minutes if you want extra browning.

Pasta and Spicy Vodka Sauce

Bring a pot of water to a boil and cook the pasta according to package directions. Reserve 1 cup of pasta water before straining and drizzle the cooked pasta with 1 tbsp olive oil to prevent sticking.

Soak the cashews in the reserved hot pasta water for about 10 minutes, then drain and place them in a blender.

Heat 3 tbsp olive oil in a large skillet over medium heat. Sauté diced onion and minced garlic until translucent, about 5 minutes. Add the fire-roasted tomatoes, vodka (or substitute), and salt, then simmer on medium-low for 10 minutes.

After simmering, transfer the mixture to the blender with the soaked cashews, fresh basil and Calabrian peppers. Blend until very smooth, keeping the blender lid slightly ajar and covering with a towel to let steam escape.

Serve and Store

Serve the drained pasta topped with spicy vodka sauce, meatballs and chopped fresh basil. Sea salt and a side salad or broccolini make great accompaniments.

Store leftover meatballs in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat gently from thawed in a 350°F oven for 8–12 minutes until warmed through. Store sauce in an airtight container in the fridge for up to 5 days or frozen for up to 3 months; thaw overnight in the fridge and reheat on the stove.

Recipe Substitutions & Questions

Use any penne you like—penne is recommended because its shape holds the sauce well. If not dairy-free, a splash of heavy cream or whole milk can boost creaminess; start with a small amount to taste. Unsweetened almond milk or Greek yogurt may work but adjust gradually since they weren’t tested here.

Adjust the Calabrian chiles or substitute milder chiles based on your heat preference. Fire-roasted tomatoes add a smoky sweetness, but regular canned tomatoes will also work. Vodka enhances flavor but can be omitted or replaced with water and lemon. Any ground meat works for the meatballs; tweak jalapeño and chili flakes to control spice.

  • 2–3 tbsp avocado or extra virgin olive oil (for cooking)

  • Fresh ground pepper

Instructions

Meatballs

  1. Mix meatball ingredients and roll into 1-inch rounds.
