For the Jam:

  • Frozen raspberries

HOW TO MAKE HEALTHY RASPBERRY CRUMBLE BARS (GLUTEN-FREE, DAIRY-FREE)

Preheat the oven to 350°F.

Line an 8×8 baking dish with parchment and grease the sides with a neutral oil spray. Set aside.

For the Jam:

Combine the frozen raspberries and maple syrup in a medium pot. Heat over medium until the raspberries thaw and release their juices, then bring to a gentle simmer.

Add the chia seeds, lower the heat to medium-low, and cook, stirring occasionally, until the liquid reduces and the chia seeds begin to thicken the mixture, about 3–5 minutes. The jam is ready when you can run a wooden spoon along the bottom and the liquid doesn’t immediately fill the space.

Remove from heat and let cool slightly.

For the Base:

In a medium bowl whisk together almond flour, rolled oats, baking powder, and salt. In another bowl whisk coconut sugar, maple syrup, melted and cooled ghee, the egg, vanilla, and almond extract (if using) until smooth and slightly thickened, about 30 seconds.

Add the dry ingredients to the wet and stir with a wooden spoon until fully combined and no streaks remain.

To Assemble & Store:

Press about two-thirds of the base mixture into the prepared pan, working it into an even layer and to the corners. Spoon the raspberry jam over the base and spread evenly.

Stir the sliced almonds into the remaining base mixture. Crumble this mixture over the jam, leaving some jam visible so it peeks through the topping.

Bake on the middle rack for 22–25 minutes, until the top is golden and crisp. Cool completely before cutting into 16 squares.

Store in an airtight container in the fridge for up to one week. They also freeze well—wrap individually or as a batch and thaw at room temperature or warm slightly before serving.
