Ingredients
Chex Mix Ingredients:
- 4 cups Rice Chex™
- 1 cup gluten-free pretzels
- 3/4 cup Brazil nuts
- 1/2 cup pecans
- 1/2 cup peanuts
- 1/2 cup cashews
- 1/3 cup pumpkin seeds
- 1/3 cup ghee (or substitute coconut oil or avocado oil)
- 1 tbsp Worcestershire sauce
- 3/4 tsp onion powder
- 3/4 tsp garlic powder
- 3/4 tsp pink salt or sea salt
Homemade Gluten-Free Worcestershire Sauce (Optional, if not using store-bought GF version):
- 1/2 cup apple cider vinegar
- 2 tbsp tamari soy sauce (ensure it’s gluten-free)
- 2 tbsp water
- 1 tbsp molasses
- 1/4 tsp dry mustard
- 1/4 tsp ground ginger
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/8 tsp pepper
- 1/8 tsp cinnamon
Instructions
For Homemade GF Worcestershire Sauce:
- Add all ingredients for the Worcestershire sauce to a medium saucepan and stir thoroughly.
- Bring ingredients to a boil over medium heat, stirring consistently.
- Simmer for 1 minute.
- Let sauce cool completely and then store in the refrigerator in an airtight container. Shake well before using.
For the Chex Mix:
- Preheat oven to 300 degrees F (150 degrees C).
- In a large mixing bowl, combine Rice Chex, gluten-free pretzels, and all the nuts and seeds.
- In a small saucepan over low heat, gently melt the ghee (or your chosen oil) until liquid.
- Remove from heat and stir in the Worcestershire sauce, onion powder, garlic powder, and salt until well combined.
- Pour the seasoned liquid mixture over the dry ingredients in the large mixing bowl. Stir gently until all ingredients are thoroughly and evenly coated.
- Line a large sheet pan with parchment paper. Pour the entire Chex Mix onto the prepared pan and spread it out evenly in a single layer.
- Bake for 45 minutes, stirring the mixture thoroughly every 15 minutes to ensure even roasting and crispness.
- Once baked, remove from the oven and let cool for 5-10 minutes on the pan before digging in. This allows it to crisp up further.
- Store any leftover Chex Mix in an airtight container at room temperature for up to a week, or freeze for longer freshness.
