Best Way to Start the Day

I wake up hungry every single day, and I love starting with something that tastes great and fuels me. The Dippy Tomato Egg Skillet is my go-to weekend brunch: savory, slightly spicy, and packed with protein and vegetables. It’s satisfying enough to keep you full through a busy morning, whether you have work, errands, or an active day ahead. It’s also a one-skillet meal, which means minimal cleanup—always a plus.

Food for Fuel

A great meal balances protein, healthy fats, and carbohydrates to keep you energized. Eggs are a complete protein and a rich source of vitamins like A, D, E, and several B vitamins—about 6 grams of protein per egg with all nine essential amino acids. Bell peppers add vitamin C and antioxidants along with a mild sweetness that complements the tomato sauce and eggs. Onions, garlic, and herbs boost flavor and nutrients, while optional toppings—cheese, avocado, or seared chicken sausage—add more texture and sustenance.

A Shareable Skillet

Also known as shakshuka, this style of dish is a popular brunch favorite. It’s warm, comforting, and perfect for sharing—ideal for chilly mornings or lazy weekends with friends. Serve it family-style straight from the skillet with toasted sourdough for dipping, or skip the toast and add chicken sausage to keep it higher in protein. Either way, it’s a dish that often becomes a regular on brunch menus once people try it.

How to Make Dippy Tomato Egg Skillet

Heat oil in a large skillet over medium-high heat. Add the diced onion and bell pepper and sauté for 3 to 5 minutes, until the onions are translucent. Stir in the garlic, basil, sea salt, chili powder, and paprika, and cook for another 2 minutes to bloom the spices.

Pour in the marinara and stir to combine, cooking for 2 minutes until the sauce is heated through. Carefully crack the eggs into the sauce, spacing them evenly, then reduce heat to medium-low. Cook uncovered for 8 to 10 minutes, or cover to shorten the time, until the egg whites are set and the yolks reach your preferred doneness. In the last few minutes, sprinkle shredded cheese over the top so it melts.

Remove from heat and finish with chopped cilantro or parsley. Serve with sliced avocado, toasted sourdough, and chicken sausage if desired.

Recipe Substitutions & Questions

I recommend pasture-raised eggs when possible; they’re often higher in certain nutrients and have richer-colored yolks. Any jarred marinara without added sugar works here. I used goat cheese due to lactose sensitivity, but use whatever cheese you prefer. Serve with sourdough for dipping or add seared chicken sausage for a higher-protein option. Sliced avocado is optional but pairs beautifully with the dish.

How Do You Know When Shakshuka Is Done?

Shakshuka, or Dippy Tomato Egg Skillet, is done when the egg whites are opaque and set while the yolks have puffed slightly but remain soft. If you like firmer yolks, cook a bit longer—watch closely to avoid overcooking.

Do You Have to Use a Cast-Iron Skillet?

Cast iron is traditional and holds heat well, but any large skillet will work. Just be mindful that cook times can vary by pan.
