Prepare the oat and chia mixture the night before by whisking together the liquid and dry components, then refrigerate. In the morning you can either enjoy it cold like traditional overnight oats or warm a single serving on the stovetop with a splash of cashew milk, then stir in cashew butter, coconut yogurt and a few pieces of chopped dark chocolate for a melty finish.

Finish with a drizzle of maple syrup and a sprinkle of chopped walnuts for crunch and extra flavor.

HOW TO MAKE MY WARMING CHOCOLATE OATMEAL PUDDING

For the Batch:

In a medium bowl, whisk together cashew milk, collagen peptides, vanilla protein powder, vanilla extract, a pinch of salt, cinnamon, maple syrup and cashew butter until smooth.

Stir in the oats, chia seeds, hemp seeds, walnuts and cacao nibs until evenly combined.

Divide the mixture into airtight containers or jars and refrigerate overnight to thicken. If you prefer to eat it chilled, simply spoon into a bowl and top with extra cashew butter, a dollop of coconut yogurt, a drizzle of maple syrup and chopped dark chocolate.

To Serve Individually:

Note: this yields a hearty single serving.

Heat 1 cup of the oat-and-chia mixture in a small pot over medium-low heat with 1/4 cup cashew milk. Stir until the mixture begins to simmer at the edges and has absorbed the liquid.

Add additional cashew milk, 1–2 tablespoons at a time, until you reach your preferred consistency. Remove from heat and stir in 1 tablespoon cashew butter.

Transfer to a bowl, swirl in a spoonful of coconut yogurt and a few pieces of chopped dark chocolate. Top with maple syrup and chopped walnuts to taste.

RECIPE SUBSTITUTIONS & TIPS

If you don’t have cashew milk, unsweetened almond milk or regular dairy milk can be used instead. Swap cashew butter for almond butter if preferred, and use chocolate chips in place of chopped dark chocolate if that’s easier.
