This dessert turned out amazing! You can make it fully vegan by swapping the granola for a certified vegan variety.

Ingredients

Filling

  • 9 apples
  • 1/4 cup coconut sugar
  • 2 tbsp cornstarch
  • 1/2 tbsp cinnamon
  • 1 tsp ground ginger
  • 1 lemon, squeezed

Crumble

  • 1/2 cup + 2 tbsp almond flour
  • 3 tbsp GF rolled oats
  • 1/2 cup roughly chopped pecans
  • 1/2 cup granola
  • 1 tbsp cinnamon
  • 1/3 cup coconut oil, melted
  • 1/4 cup coconut sugar

Instructions

  • Preheat oven to 350°F (175°C).
  • Slice the apples and remove the cores.
  • In a large bowl, toss the apple slices with coconut sugar, cornstarch (to thicken), cinnamon, ground ginger and the squeezed lemon juice until evenly coated.
  • Transfer the apple mixture to a 9 x 12-inch baking dish, spreading it into an even layer.
  • In the same bowl, combine the crumble ingredients: almond flour, gluten-free rolled oats, chopped pecans, granola, cinnamon, melted coconut oil and coconut sugar. Mix until well combined.
  • Scatter the crumble mixture evenly over the apple filling.
  • Bake for about 50 minutes, until the filling is bubbling and the topping is golden. Let cool slightly before serving.
