For the Crust:

  • 1 (4.25 oz.) box Simple Mills Honey Cinnamon Sweet Thins
  • 1 ¼ cup almond flour
  • 2 tablespoons coconut sugar
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • cup melted coconut oil
  • 1 large egg, beaten

For the filling:

  • 1 15 oz. can of pumpkin puree
  • 3 large eggs, room temperature
  • ¼ cup maple syrup
  • ½ cup coconut sugar
  • 2 teaspoons cinnamon, plus more for serving
  • 1 teaspoon ground ginger
  • ½ teaspoon ground nutmeg
  • ½ teaspoon kosher salt
  • ¾ cup full-fat coconut milk
  • 1 tablespoons tapioca flour

To Serve:
