  • few shakes sea salt

  • few shakes ground pepper

  • 3-4 tbsp avocado or extra virgin olive oil

  • tortillas, (I prefer Siete gluten-free cassava flour)

  • mixed greens/thinly chopped cabbage

  • chunky mango pico, (recipe linked above)

  • fresh cilantro

  • lime wedges

  • In a food processor or blender, combine the crackers, flaxseed (if using), and your preferred spices. Pulse until the mixture achieves a fine, flour-like consistency. If you don’t own a food processor, simply place all ingredients in a large Ziploc bag, seal it, and use the bottom of a heavy glass or a rolling pin to crush the crackers until finely ground.
  • Pour the breading mixture into a deep dish bowl. In a separate deep dish bowl, whisk one pasture-raised egg until well combined.
