Ingredients

  • 2 lb organic lean ground turkey
  • 1/3 cup bell pepper, any color, diced
  • 1/3 cup red or yellow onion, diced
  • 2 tbsp green onion, chopped
  • ½ cup chopped spinach
  • 1/4 cup sundried tomato, chopped
  • 1/4 cup organic crumbled feta cheese
  • 1-2 tbsp fennel seed
  • 2 tbsp oregano tomato basil, or Italian seasoning
  • Sea salt/pepper to taste
  • 1/2 tbsp minced garlic
  • 2 tbsp olive oil
  • 2 tbsp low sodium chicken broth

Instructions

  • For extra flavor, you can sauté the diced bell pepper, onion and sundried tomato in 1 tsp olive oil before adding them to the mix.
  • In a large bowl, combine all ingredients except the olive oil and chicken broth. Mix until evenly distributed, then shape the mixture into 12 patties.
  • Heat a flat top, grill, or skillet over medium heat and add the olive oil. Place the patties on the surface and cook.
  • Cook until golden brown on each side, about 4–5 minutes per side, depending on thickness.
  • If patties are thick and need more time, add the chicken broth to the pan, cover, and steam on low heat until cooked through. Alternatively, finish them in a 350°F oven for about 5 minutes.
  • Allow patties to cool, then store in an airtight container in the refrigerator for up to 5 days, or freeze for longer storage.
