  • 1 can (13.5 oz) full-fat coconut milk
  • Drizzle of plain yogurt or coconut cream (optional topping, for serving)

Pumpkin Seed Topping

  • 1 tablespoon extra-virgin olive oil
  • ½ cup raw pumpkin seeds
  • ¼ teaspoon curry powder
  • ¼ teaspoon sea salt

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Soak Cashews: In a medium, heatproof bowl, cover the raw cashews with boiling water. Let them soak while you prepare and roast the kabocha squash. Soaking helps soften them for a smoother soup.
  3. Roast Vegetables: Carefully cut the kabocha squash in half and use a spoon to scoop out the seeds and fibrous bits. On a large sheet pan, drizzle the cut side of the squash with about 1 tablespoon of olive oil. Place the squash cut-side down on the pan. Arrange the quartered yellow onion and peeled garlic cloves around the squash. Drizzle the onion and garlic with a little more olive oil. Place the sheet pan in the preheated oven and roast for approximately 40 minutes, or until the kabocha squash is fork-tender and slightly caramelized.
  4. Cool & Drain: Remove the sheet pan from the oven and allow the roasted vegetables to cool slightly, making them easier to handle. While they cool, drain the water from the soaked cashews.
  5. Blend Soup Base: Once the kabocha squash is cool enough to touch, scoop out its soft flesh and transfer it to a high-speed blender. Add the roasted onions, roasted garlic, drained cashews, organic chicken bone broth, 1 teaspoon of curry powder, 1 ½ teaspoons of sea salt, and ½ teaspoon of freshly ground black pepper. Blend the mixture until it is completely smooth and creamy.
  6. Simmer: Pour the blended soup into a large saucepan or Dutch oven. Stir in the full-fat coconut milk. Bring the soup to a gentle simmer over medium heat, stirring occasionally.
