How to make Paleo Peach Cobbler
Preheat the oven to 350°F (175°C). Grease an 8- or 9-inch cast iron skillet or baking dish with a thin layer of coconut oil.
Slice fresh peaches into 1/4-inch slices. If using frozen peaches, thaw to room temperature. In a large bowl, combine peaches, maple syrup, vanilla extract, juice of 1/2 lemon, arrowroot starch, and cinnamon. Mix until the peaches are evenly coated, then transfer the mixture to the prepared skillet and spread it evenly.
Prepare the crumble using a food processor: pulse pumpkin seeds, walnuts, and pecans until they reach a semi-fine texture. Add almond flour, ground flaxseed, coconut flakes (if using), melted coconut oil, arrowroot starch, maple syrup, vanilla extract, cinnamon, and a pinch of sea salt. Pulse until the mixture becomes a fine, crumbly texture. If you don’t have a food processor, finely chop the nuts and seeds and mix thoroughly with the remaining ingredients.
Evenly sprinkle the crumble over the peach filling. Bake for 40–45 minutes, or until the filling is bubbling and the crumble is golden brown. Allow the cobbler to cool for at least five minutes before serving. It’s wonderful with vanilla ice cream, dairy-free whipped cream, or on its own.

Instructions
