To keep this version dairy-free, I used dark chocolate (usually dairy-free) and ghee, a lactose-free butter alternative. Holiday Muddy Buddies (Allergen-Friendly!)
Ingredients
- 11 cups Rice Chex
- two 2.5 oz dark chocolate bars (I use Eating Evolved Signature Dark)
- 1 cup single-ingredient peanut butter (or use sunflower butter for a nut-free option!)
- 1/4 cup ghee
- 1 tsp vanilla extract
- 2 cups monkfruit powdered sugar

Measure the Rice Chex into a large bowl and set aside.

In a small saucepan over low heat or in a microwave-safe bowl, melt the dark chocolate, peanut butter (or sunflower butter for a nut-free option), and ghee, stirring until smooth and fully melted. Stir in the vanilla extract.

Pour the chocolate mixture evenly over the cereal and stir gently to coat. Transfer about half the coated cereal into a large resealable 2-gallon bag, add the monkfruit powdered sugar, seal the bag, and shake until well coated. Spread the coated cereal on parchment paper to cool, or package into jars while still slightly warm. Store in an airtight container in the refrigerator or freezer for longer shelf life. Enjoy!
