  3. Build the base. Stir in tomato paste, dried oregano, thyme, salt, and red pepper flakes if using. Cook the paste briefly to deepen its flavor, then deglaze with red wine vinegar, scraping up browned bits from the bottom of the pot.
  4. Simmer the sauce. Add the whole tomatoes and bone broth, bring to a low boil, then reduce heat and simmer uncovered until slightly reduced, about 10–15 minutes.
  5. Blend until smooth. Remove from heat and blend the sauce until mostly smooth using an immersion blender. If using a stand blender, allow the sauce to cool noticeably before blending to avoid splatters.
  6. Finish the sauce. Stir in cottage cheese, add the reserved meat and juices back into the pot, and simmer on low for a few more minutes to meld flavors. Finish with fresh basil.
  7. Cool and store. Cool completely before transferring to airtight containers. Leave a little headspace if freezing. Store in the fridge for up to one week or freeze for longer storage.

For the Meat:

  • 1 tablespoon olive oil
  • 1 pound ground pork Italian sausage (casings removed)
  • 1 pound lean grass-fed ground beef (90/10)
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper

For the Sauce:

  • 2 cups diced yellow onion (about 1 large onion)
  • 2 cups diced zucchini (about 1 medium zucchini)
  • 1 cup diced carrot (about 1 large carrot)
  • 6 cloves garlic, minced
  • 2 teaspoons dried oregano
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon kosher salt
  • 1 teaspoon crushed red pepper flakes (optional)
  • 1 6 oz. can tomato paste
  • 2 tablespoons red wine vinegar
  • 1 28 oz. can whole peeled tomatoes
  • 1 cup beef bone broth
  • 1 cup whole milk cottage cheese
  • ½ cup julienned fresh basil

Instructions

For the Meat:

  • Heat olive oil in a large stockpot or Dutch oven over medium-high heat.
  • Add the sausage and ground beef, season with salt and pepper, and let the meat sear undisturbed for about 4 minutes. Break up the meat with a wooden spoon and cook until browned, another 4–6 minutes.
  • Remove the meat with a slotted spoon and set aside. Drain excess grease, leaving about 2 tablespoons. If the pot is dry, add 1 tablespoon olive oil.

For the Sauce:

  • Reduce heat to medium and add onion, zucchini, and carrot. Cook, stirring occasionally, until the vegetables are translucent, about 8 minutes.
  • Season with oregano, thyme, salt, and red pepper flakes if using. Stir in tomato paste and cook, stirring occasionally, about 5 minutes to deepen the flavors.
  • Pour in the red wine vinegar and stir for about 1 minute to deglaze the pot and lift browned bits.
  • Add the whole tomatoes and bone broth. Stir to combine and bring to a low boil.
  • Lower the heat to medium-low and simmer, uncovered, for 10–15 minutes until slightly reduced. Remove from heat.
  • Add the cottage cheese to the pot and blend with an immersion blender until mostly smooth. If using a countertop blender, cool the sauce significantly before blending.
  • Return the meat and any accumulated juices to the pot, set heat to low, and simmer about 5 more minutes. Stir in fresh basil before serving.

To Store:

  • Allow the sauce to cool completely before transferring to quart-sized containers. Leave about 1 cm of headspace if freezing. Seal and freeze. The sauce will keep up to 5 months in the freezer and about 1 week in the fridge.
