Chocolate Tahini Skillet Cookies: Gooey One-Pan Dessert

I can’t stop raving about this Chocolate Tahini Cookie Skillet. If chocolate counts as dessert to you, this one will be a favorite. It’s gluten-free, dairy-free, and free of refined sugar—an indulgent treat that still feels wholesome.

This skillet version is adapted to fit a 12-inch cast iron pan and is based on my Tahini Chocolate Chunk Cookies. Those cookies are a hit from the ‘Sweets’ chapter of my New York Times Best-Seller cookbook, so turning them into a skillet felt like the natural next step.

A CHOCOLATE TAHINI COOKIE SKILLET TREAT

I first made this around Valentine’s Day, and it quickly became a frequent request. But you don’t need an occasion—this skillet is perfect any time of year. Every time I make it, I remember how obsessed I am and keep thinking about it for days.

The texture is pure decadence—part brownie, part cookie—while still feeling surprisingly light thanks to the wholesome ingredients. You’d never guess it’s made with better-for-you components; it simply tastes indulgent.

IRRESISTIBLY NUTRITIOUS

Tahini is simply sesame seed paste, and it brings a subtle savory note that elevates the chocolate. It adds creaminess to the dough so the cookie isn’t too heavy and contributes healthy fats, amino acids, and vitamins and minerals such as B vitamins, magnesium, and iron.

Raw cacao powder is another nutrient-dense ingredient in this skillet. It’s rich in antioxidants, supports mood, and has hormone-balancing benefits. Almond flour supplies prebiotic fiber, and topping the skillet with fresh berries adds an extra antioxidant punch.

INGREDIENTS YOU’LL NEED:

For the Cookie:

  • 2 eggs
  • 1/2 cup + 1 tablespoon tahini
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1/4 cup coconut oil, melted and cooled
  • 1/2 cup raw cacao powder
  • 3 tablespoons almond flour
  • Few pinches flaky sea salt
  • 1/4 teaspoon baking soda
  • 1/3–1/2 cup dairy-free dark chocolate chips

Toppings:

  • Pinch of flaky sea salt
  • Additional chocolate chips or chunks
  • Fresh organic berries

HOW TO MAKE MY CHOCOLATE TAHINI COOKIE SKILLET

Preheat the oven to 350°F.

In a large bowl, whisk together the eggs, tahini, vanilla, maple syrup, and cooled melted coconut oil until smooth.

Add the cacao powder, almond flour, flaky sea salt, and baking soda a tablespoon at a time, folding gently as you go. Fold in the chocolate chips.

Grease a 12-inch cast iron skillet (or a baking dish or loaf pan) and spread the dough evenly. Top with extra chocolate chips and a sprinkle of flaky sea salt.

Bake for 13–15 minutes. Allow to cool for at least 5 minutes, then top with fresh berries and serve warm.

RECIPE SUBSTITUTIONS & QUESTIONS

Substitutions can work well here. Use honey in place of maple syrup if preferred. Swap the tahini for another seed or nut butter if you need to avoid sesame.

If you’re not gluten-free, you can generally replace almond flour with all-purpose or whole wheat flour at a 1:1 ratio. Oat flour is another option—opt for organic to avoid possible pesticide residues.

Choose whichever semisweet or dark chocolate chips you prefer. You can bake this in a regular pan instead of a cast iron skillet; just watch the baking time, which may vary slightly.

Serve with berries, whipped cream, chopped nuts, or ice cream. This skillet is versatile and pairs beautifully with many toppings.
