I’m a big fan of chia pudding. If you’ve found this page, you probably already know why: it’s quick to prepare, great for meal prep, and versatile enough to serve as breakfast, snack, or dessert. Chia pudding is packed with nutrients that support gut and brain health, and it keeps you feeling satisfied thanks to healthy fats and fiber.

Chia pudding is a regular in my fridge. If you enjoy coconut-forward flavors, try the Coconut Mango Chia Pudding next—coconut cream in the base adds richness and sustaining fats that help keep you full longer. There are endless ways to flavor a basic chia pudding, and this creamy coconut version is one of my favorites.

INGREDIENTS YOU’LL NEED

  • Unsweetened almond milk
  • Organic coconut cream
  • Chia seeds
  • Hemp seeds
  • Vanilla extract
  • Cinnamon

OPTIONAL TOPPINGS

  • Blueberries
  • Raspberries
  • Pecans
  • Goji berries
  • Coconut flakes

HOW TO MAKE CREAMY COCONUT CHIA PUDDING

Combine the almond milk, coconut cream, chia seeds, hemp seeds, vanilla extract, and cinnamon in an airtight container or jar. Stir thoroughly so the seeds are evenly distributed. Refrigerate for at least 1 hour, though 2 hours or overnight yields a thicker, creamier texture.

When the pudding has set, stir once more and add your favorite toppings. I like a combination of mixed berries, goji berries, pecans, and a sprinkle of coconut flakes. Serve chilled and enjoy.

HOW LONG DOES CHIA PUDDING LAST?

Stored in an airtight container in the refrigerator, chia pudding will keep for up to a week. If you add fresh fruit or nuts, the texture and shelf life may change—add perishable toppings just before serving for best results.

IS IT GOOD TO EAT CHIA SEEDS EVERY DAY?

Chia seeds are an easy way to add healthy fats, fiber, and plant-based protein to your daily routine. They work well in smoothies, baked goods, and as a pudding base. Regular consumption can support digestion and provide omega-3s that benefit skin and brain health. As with any food, enjoy them as part of a balanced diet.

WHAT ARE THE BENEFITS OF CHIA SEEDS?

Chia seeds offer a concentrated source of fiber, omega-3 fatty acids, antioxidants, and minerals. They support digestion, help maintain steady energy, and contribute to healthy skin and brain function. Combined with fruit and nuts, chia pudding becomes a satisfying, nutrient-dense snack or meal.
