- ½ teaspoon baking powder
- ¼ teaspoon sea salt
- 1 cup unsweetened almond milk
- 1 large egg
- 2 tablespoons maple syrup or raw honey
- 1 teaspoon vanilla extract
- 2 tablespoons peanut butter, optional
- 1 cup fresh or frozen mixed berries
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 12-cup muffin tin.
- In a large bowl, combine oats, protein powder, cinnamon, baking powder, and salt. Whisk well.
- In a separate bowl, whisk together almond milk, egg, maple syrup (or honey), vanilla extract, and optional peanut butter until smooth.
