  • Heat oil in a medium skillet. Add diced red onion and minced garlic, sautéing for several minutes until fragrant and softened.
  • Add 1 lb organic ground turkey or chicken and brown for approximately 5-7 minutes, breaking it up with a spoon. Next, stir in seasonings (cumin, chili powder, paprika, sea salt, black pepper), chopped zucchini, and diced red bell pepper. Pour in ½ of the 15-oz can of enchilada sauce and let cook for several minutes. Then, add the remaining sauce, ¼ cup chopped cilantro, and ¼ cup shredded cheese, mixing until combined.
  • Immediately stir in the tortilla strips, ensuring they are well coated in the sauce. Cover the skillet with a lid and cook for 10 minutes on medium to low heat, allowing the tortillas to soften and absorb the flavors.
  • Remove the lid, give a good stir. Add the rest of the shredded cheese, green onion, and remaining cilantro. Cover for one more minute to melt the cheese.
