High-Protein Beef and Zucchini Lasagna Recipe

If you want a comforting, wholesome meal that’s easy to feel good about, try this Protein-Packed Beef & Zucchini Lasagna. It’s warm, cheesy, and full of protein thanks to a rich beef layer and a cottage cheese–based cheese layer, with grated zucchini folded in for extra nutrition.

Last summer my garden produced a ridiculous amount of zucchini, and while I often turn it into zucchini bread or muffins, this lasagna is my go-to when I want something nourishing, freezer-friendly, and family-approved. It’s great for busy weeknights, feeding a crowd, or gifting to new parents.

PROTEIN-PACKED PASTA PERFECTION

Lasagna is a timeless comfort dish, and this lighter version keeps the flavor while boosting protein and vegetables. The beef-packed meat sauce pairs beautifully with a blended cottage cheese layer that’s seasoned with lemon, garlic, oregano, and parsley. The result is hearty, balanced, and irresistible.

Prep is straightforward: about 25 minutes to blanch the noodles, blend the cheese layer, and cook the meat sauce. From there it assembles quickly and bakes into a golden, bubbly casserole that reheats beautifully.

NUTRITIOUSLY IMPRESSIVE BEEF & ZUCCHINI LASAGNA

This lasagna delivers flavor and nutrition. Zucchini adds fiber, antioxidants, and anti-inflammatory nutrients while blending seamlessly into the meat sauce. Grass-fed ground beef provides a satisfying, nutrient-dense base for the sauce, and the cottage cheese layer contributes protein while keeping the dish lighter than a ricotta-heavy version.

The meat layer is simple but flavorful: onion and garlic sautéed with ground beef, grated zucchini stirred in, and marinara simmered until everything is cohesive. I love this layer on its own, but layered into the lasagna it becomes the star of a balanced, protein-forward dinner.

FREEZER-FRIENDLY LASAGNA

This lasagna freezes exceptionally well, making it a great option for meal prep or gifting. Assemble and cool completely, then wrap tightly in plastic and foil; it will keep up to one month. Thaw overnight in the fridge before baking, bring to room temperature for about 30 minutes, and bake as directed—add about 10 extra minutes if the lasagna is still cold.

HOW TO MAKE MY PROTEIN-PACKED BEEF & ZUCCHINI LASAGNA

Preheat the oven to 375°F.

For the Cheese Layer:

In a high-speed blender combine the cottage cheese, garlic, egg, lemon juice, lemon zest, dried oregano, salt, and pepper. Blend on low–medium until smooth and fluffy. Transfer to a bowl, stir in the parmesan and parsley, cover, and chill until ready to assemble.

For the Meat Layer:

Heat olive oil in a large, tall-sided skillet over medium-high heat. Add diced onions and cook until softened, about 5 minutes. Add the ground beef and break it up, cooking until browned, about 8–10 minutes. Drain excess grease if necessary. Stir in minced garlic, grated zucchini, salt, and oregano; cook until the zucchini softens, about 4 minutes. Reduce heat to medium, add marinara, and simmer uncovered for about 10 minutes. Remove from heat.

For the Pasta:

Bring a large pot of salted water to a boil. Par-cook the lasagna noodles for about 4 minutes. Drain and rinse under cold water, separating any sheets that have stuck together.

To Assemble:

Grease a 9×13 pan with olive oil. Spread about one-third of the meat sauce across the bottom. Arrange a layer of noodles on top, then dollop and spread one-third of the cheese mixture. Add another third of the meat mixture and sprinkle with one-third of the shredded mozzarella.

Repeat: noodles, cheese mixture, meat sauce, shredded cheese. Finish with a final layer of noodles, the remaining cheese mixture, shredded mozzarella, and a sprinkle of parmesan.

Spray foil with avocado oil cooking spray to keep cheese from sticking. Cover the lasagna tightly with the foil and bake on the middle rack at 375°F for 25 minutes. Remove the foil and bake an additional 15 minutes until the top is golden and bubbly. For extra browning, place on the top rack and broil 3–4 minutes, watching closely. Let cool slightly, garnish with parsley, and serve warm.

To Freeze:

Assemble the lasagna but do not bake. Cool completely, wrap tightly in plastic wrap, then in foil, and freeze up to one month. Thaw overnight in the refrigerator before baking. Allow it to sit at room temperature about 30 minutes before baking; you may need to add about 10 minutes to the bake time if it’s still cold.

RECIPE SUBSTITUTIONS & NOTES

Use your preferred cottage cheese for the cheese layer; whole-milk cottage cheese gives a richer texture while still adding protein. Grated parm is optional but recommended. Ground turkey or chicken can replace beef if you prefer, and any marinara you like will work. Brown rice noodles and goat mozzarella are good choices for those avoiding gluten or cow dairy, but standard noodles and mozzarella are fine substitutions.

WHAT IS THE CORRECT ORDER TO LAYER LASAGNA?

Start with a thin layer of sauce on the bottom to prevent sticking. Then layer noodles, cheese mixture, meat sauce, and shredded cheese. Repeat until the pan is filled, finishing with a shredded cheese layer on top.

COTTAGE CHEESE OR RICOTTA?

Both work well. Ricotta is richer and creamier; cottage cheese adds extra protein and lightens the dish. Choose based on taste and dietary needs.
