For the Avo Chimichurri:

  • Fresh cilantro leaves
  • Fresh parsley leaves
  • Extra-virgin olive oil
  • Chopped red onion
  • Red wine vinegar

  • Ground cumin
  • Red chili flakes
  • Freshly ground black pepper
  • Avocado

  • Organic, pasture-raised eggs
  • Avocado oil, extra-virgin olive oil or ghee
  • Tortillas (use your preferred variety)
  • Store-bought or homemade chimichurri
  • Grated cheese (hard goat cheese, cheddar or your choice)

HOW TO MAKE MY AVO CHIMICHURRI BREAKFAST TACOS

Avo Chimichurri

In a food processor or blender, combine cilantro, parsley, extra-virgin olive oil, chopped red onion, red wine vinegar, minced garlic, sea salt, ground cumin, red chili flakes and black pepper. Puree until smooth.

Transfer the chimichurri to a bowl. Measure out about 1/4 cup and gently toss it with cubed avocado in a separate medium bowl. If you make chimichurri ahead of time, store it (without avocado) in an airtight container in the refrigerator for up to 5 days and add the avocado just before serving.

For the Tacos

Heat a medium skillet over medium-low heat and add 1–2 tablespoons of oil or ghee for several eggs. Meanwhile, whisk the eggs until combined.

Pour the eggs into the heated pan. For soft scrambled eggs, cook low and slow: let the mixture set undisturbed for about 30 seconds, then use a silicone spatula to gently push the edges toward the center. Add half of the grated cheese and a pinch of salt, continue gently stirring to form soft curds, and remove the eggs from heat just before they’re fully set—the residual heat will finish them.

Warm and lightly char tortillas one at a time over an open flame or in the skillet for 30 seconds to 1 minute per side, until you reach your preferred level of char.

Assemble the tacos by dividing the eggs among the tortillas. Top with the remaining cheese, red chili flakes and a pinch of sea salt. Spoon the avocado chimichurri over the top and serve immediately.

Ingredients

Avo Chimichurri

  • 1/2 cup packed fresh cilantro leaves
  • 1/2 cup packed fresh parsley leaves
  • 1/3 cup extra-virgin olive oil
  • 3 tablespoons chopped red onion
  • 2 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cumin
  • Pinch red chili flakes
  • Freshly ground black pepper, to taste
  • 3/4 of an avocado, cubed

For the Tacos

  • 3–5 organic, pasture-raised eggs
  • 2 tablespoons avocado oil, or EVOO, or ghee
  • 3–4 tortillas
  • 1/4 cup store-bought or homemade chimichurri
  • 1/4 cup grated cheese (optional)
  • Sea salt
  • Red chili flakes

Instructions

Avo Chimichurri

  1. Puree cilantro, parsley, olive oil, red onion, vinegar, garlic, salt, cumin, chili flakes and pepper in a food processor or blender until smooth.
  2. Transfer to a bowl. Measure 1/4 cup of chimichurri and toss with cubed avocado in a separate bowl.
  3. Store leftover chimichurri (without avocado) in an airtight container in the refrigerator up to 5 days; add avocado just before serving.

For the Tacos

  2. Whisk eggs, then pour into the hot pan. For soft scrambled eggs, let them set for 30 seconds before gently pushing the edges toward the center with a spatula.

  4. Warm and lightly char tortillas over an open flame or in the pan for 30 seconds to 1 minute per side.
  5. Assemble tacos by filling tortillas with eggs, topping with remaining cheese, red chili flakes, sea salt and a spoonful of avocado chimichurri. Serve immediately.
