Crispy Bean and Beef Flautas

Ingredients
- 1 lb organic ground beef, (or protein of your choice)
- taco seasoning, (I used Siete mild taco seasoning)
- 1 can refried pinto beans
- 4-6 tortillas, (I prefer Siete cassava flour)
- 3 tbsp avocado oil
- peppers and onions, sauteed, (optional for topping)
- avocado/ guac, (optional for topping)
- cilantro, (optional for topping)
- sour cream, (optional for topping)
- salsa, (optional for topping)
Instructions

Prepare the taco-seasoned beef according to the packet directions, or season and cook your preferred protein until browned and fully cooked.

Warm the tortillas in a dry skillet or briefly over a gas flame until they are soft and pliable.

Heat the refried beans in a small saucepan over medium heat until they are warmed through, then remove from the heat.

Assemble each flauta by spreading a layer of warm beans on a tortilla, then adding a layer of the seasoned meat. Roll the tortilla as tightly as possible to keep the filling secure.

Heat a medium skillet over medium heat and add the avocado oil. When the oil is hot, place the flautas seam-side down to seal them. Cook until the underside is golden, then rotate the flautas so all sides brown evenly and reach your preferred crispness.

Transfer to a plate and serve immediately with your choice of toppings—sautéed peppers and onions, avocado or guacamole, cilantro, sour cream, and salsa all make great accompaniments. Enjoy!
