Scroll down to the Recipe Card below for complete instructions & measurements.

  1. Mix the spice blend. Combine the spices in a small bowl and reserve about 1½ teaspoons to use later for crisping.
  2. Season the beef. Add flank steak to the Instant Pot or slow cooker. Season with kosher salt, black pepper, and most of the spice blend. Massage spices into the meat, then add minced garlic and sliced red onion on top.
  3. Make the sauce. Whisk together tomato paste, red wine vinegar, honey, coconut aminos, and beef broth, then pour over the beef.
  4. Cook until tender. In an Instant Pot, cook on Manual for 60 minutes and then release pressure slowly. In a slow cooker, cook on low for about 8 hours (increase broth to 1 cup if slow cooking).
  5. Shred and crisp the beef. Preheat the broiler to high and line a sheet pan with parchment. Shred the beef, spread it on the pan, toss with the reserved spices and about ½ cup of the cooking liquid, and broil on the top rack for 6–10 minutes until the edges are crispy.
  6. Make the tomato relish. While the beef broils, combine halved tomatoes, minced red onion, red wine vinegar, lemon juice, olive oil, cilantro, dill, salt, and pepper. Let it sit so the flavors meld and the onions lightly pickle.
  7. Assemble the bowls. Spoon cooked rice into bowls, top with crispy beef, a generous scoop of tomato relish, crumbled feta if using, fresh herbs, and a lemon wedge.

Recipe Substitutions & Questions

Here are a few easy swaps to customize this recipe based on what you have or your preferences:

  • Beef: Flank steak is ideal, but skirt steak or chuck roast work. Chuck roast gives a richer result and is great for the slow cooker.
  • Cooking method: Both Instant Pot and slow cooker methods work. If slow cooking, increase beef broth to 1 cup and cook on low for 8 hours.
  • Aleppo pepper: If unavailable, omit or use a pinch of red pepper flakes or smoked paprika.
  • Coconut aminos: Swap with low-sodium soy sauce or tamari (not soy-free if you do).
  • Feta: Goat or traditional feta both work; omit for dairy-free bowls.
  • Rice: Basmati or jasmine are classic; quinoa or cauliflower rice are good alternatives.
  • Herbs: Cilantro and dill are recommended; parsley can substitute if needed.

What’s the best cut of beef for Greek beef bowls?

Flank steak is best because it becomes tender when slow-cooked and crisps nicely under the broiler. Skirt steak works as well, and chuck roast is a good, richer option for slow cooking.

How do I keep the beef crispy in Greek beef bowls?

Shred the cooked beef, toss with a bit of the cooking liquid and reserved spices, then broil on a sheet pan until the edges crisp. For leftovers, reheat in a skillet or under the broiler rather than using the microwave to maintain crispness.
