Peanut Butter Swirl Fudge Brownies

PB + chocolate — need I say more? These brownies are gluten-free, grain-free, dairy-free and refined sugar-free, yet utterly indulgent.
Ingredients
- 3 pasture-raised eggs
- 1/3 cup unsweetened almond milk
- 1/3 cup avocado oil
- 1 tsp vanilla extract
- 1/4 cup chocolate chips, melted and cooled
- 1/2 cup coconut sugar
- 1 cup almond flour
- 1/2 cup paleo or gluten-free flour
- 1/4 cup cacao powder
- 1/2 tsp baking powder
- pinch sea salt
- 1/3 cup dairy-free chocolate chips
- 1/3 cup unsweetened peanut butter
Instructions

Preheat the oven to 350° F (175° C).

In a bowl, whisk together the eggs, almond milk, avocado oil and vanilla until smooth. Stir in the melted and cooled chocolate chips and coconut sugar.

Add the almond flour, paleo or gluten-free flour, cacao powder, baking powder and a pinch of sea salt. Mix until just combined, then fold in the dairy-free chocolate chips.

Pour the batter into a square baking dish lined with parchment paper, spreading it evenly.

Dollop the unsweetened peanut butter over the batter in several spoonfuls. Use a toothpick or skewer to swirl the peanut butter into the top, creating a marbled effect.

Bake for 18–20 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs. Remove from the oven and cool for 15–20 minutes.

Sprinkle with sea salt, slice and serve. Store leftovers covered at room temperature or chilled for a firmer texture.
